In honor of the Journées du Patrimoine (Heritage Days) taking place this weekend, we're talking about an area of French heritage that was included on UNESCO's list of Intangible Heritage of Humanity in 2010: the art of food and wine pairing.

Just as a choreographer matches dance steps to music to achieve a perfect symbiosis, so a sommelier matches food and wine during a gastronomic meal. To do this, he relies on a few basic principles such as similarity, complementarity and contrast, and calls on all the elements that make up the wine and food (flavors, texture, aromas, etc.).

Contrary to what you might think, the world of sommelier is relatively recent, but today it is generally agreed that pairing wine and food is the very soul of the French gastronomic meal. Although wine has been drunk in Gaul since ancient times, the glass of wine has not always had a place at the table. Far from being an accident, matching food and drink is a subtle art that gradually emerged in France between the 18th and 19th centuries in the circles of the Court and then in Parisian restaurants.

It's a skill that's easy to recognize in France, and one that we at Château de la Gaude are proud to showcase thanks to our sommeliers, who will be on hand to advise you when you dine in our gourmet restaurant, Le Art, as well as in our chic brasserie, La Source, and in our two restaurants, particularly Kaiseki, where they will be happy to match your dishes with different sakes.

Heritage isn't just about the architectural wonders of our country, it's also about the skills that we're showcasing at Château de la Gaude.
