The renovation of our winery to start in 2016 when the estate was taken over. Priority being put on the quality of winemaking and the practicality of the work in the winery, we also wanted to associate elegance and aesthetics to this project.

We entrusted the realization of the cellar to the Italian specialized company DeFranceschi which knew how to take up the challenge of the technicality of high flight while conceiving to measure with Olivier Chadebost, a unique tank design for the Château de la Gaude. The wine and aging tanks are made of anodized stainless steel, the coating of mirror stainless steel, glass platforms, it is ultimately an exceptional space that currently allows us to vinify in the best conditions.
We have designed the wine-making system entirely by gravity with a difference in levels between the reception of the harvest and the final aging tanks in order to work as much as possible by natural flow. Three separate spaces are found in our cellar: a wine-making vat for our reds, a vat dedicated to whites / rosés and finally a concrete vat intended for the breeding of our great reds.

The second part of the breeding is done in wooden container. We apply the same thoroughness and the same rigor in the choice of our coopers as what we apply in our vines and practice a fine selection of each barrel that we use in order to maintain the level of quality sought at each stage of our process. This allows us to raise our wines in the best possible conditions and to shape them in the best possible way.
